I made this tonight almost exactly as written except I cooked the lentils and added some cardamom – it was quite tasty! As for the quinoa, I have an old, beat-up strainer that I use, one of those that looks like it’s made from screen (like from a window).
I love the idea of this stew; it’s a combination of all of the foods that I normally eat in separate dishes, so this would make my dinner preparation about 20 times easier! Line the surface of large plate with a double layer of coffee filters and lightly spray with vegetable oil spray. Add eggplant, onion, and potatoes; cook, stirring frequently, until eggplant browns and surface of potatoes becomes translucent, about 2 minutes. Add zucchini, bell peppers, and ? teaspoon salt; cook, stirring occasionally, until vegetables are browned and tender, 10 to 12 minutes.
It came out so good and I swore I would make it at home, but I still haven’t gotten to it.
Similar to ratatouille, its key ingredients are ripe tomatoes, bell peppers, eggplant and onion.
