A cherished, delicious, soul-food recipe, passed down from my grandmother to my mother to me, vegetable beef stew, is ALWAYS a hit!  It doesn’t have to be snowy or gloomy outside to appreciate this warm bowl of loveliness.

I know many of you are wondering what the heck is tempeh and I don’t blame you for thinking that very question. Tempeh is high in fiber (7 grams) and protein (16 grams) but is relatively low in carbohydrates with only 10 grams per 3 ounces.
Fermented soy, such as tempeh, is the only type of soy that I normally recommend for many different reasons.
What is one ingredients that you have been wanting to try out in the kitchen but just haven’t gotten around to it yet?
One difference is that I use canned or pureed cooked pumpkin instead of the tomatoes because of a health issue in my family.

We definitely think it could be salvageable though if it tastes too beet-heavy to eat as a stew.
