I love aubergines and with Indian cuisine there are so many ways to cook this wonderful veg.
When I look through my book of hand written notes from my travels there are many stories and recipes I still have left to share.
Its nearly Christmas and whilst I plan what the menu will be for Christmas Day lunch (which is usually a feast!) I also like to have the rest of the week organised with ideas to use up leftovers. Using all the marinade ingredients make a paste.Apply this paste all over the chicken and let it marinade for 2-3 hours or overnight. Then add ginger garlic paste, turmeric powder, coriander powder, mix very well and cook for 2 minutes. Add tomatoes, chili powder, garam masala and cook for 3 to 4 mts or until tomatoes softens. Then add soaked and drained rice in boiling water and boil for 7 to 8 mts or until rice is 90% done.
After rice is done cooking, drain off all the excess water from boiled rice and keep drained rice aside.
First set the stove temperature on high heat and put the layered biryani pan over high heat for 30 to 40 seconds. First time in my life I tried Biryani, thought I should start with vegetable and it came out really good . Heat oil in a kadai, add mustard seeds and when it splutters add red chilli and curry leaves.

Grind to paste: (and add to above yogurt mix to soak) 4-5 cloves garlic, 4 green chilies, inch ginger. I use a lot of the veg to either make veg tikkis with runny fried eggs for breakfast or as part of a main meal which includes spiced salads.
Top with a little more of the fried onion leaving the rest to serve along with the vegetable biryani.

Traditional kadala curry is a  time consuming and I tried this easy kadala or chickpeas curry recipe and it came out well. Its also a best option for working mothers since they don’t have make rice and curries separately. This is a easy recipe and can be cooked by working women for lunch if the prawns are cleaned and deveined. Add the chopped tomato along with the tomato puree and continue to fry until the tomatoes soften for 3 minutes.
Turn the oven off and leave to rest until ready to serve.A Serve the vegetable biryani with salad and boondi raita.
