Heat up a dutch oven on low medium heat with a good drizzle of olive oil.  To the pan add in the diced onions, celery, and okra.

Lately, with a few more changes to our diet, I’ve spent a good bit of time with some new-to-me recipes, especially those which would be considered vegetarian.

I actually replaced the spinach with kale, since we didn’t buy spinach on our last big shopping trip earlier this month. One of the kids at the school has been begging me to make tomato soup and grilled cheeses for lunch. During the summer when my vegetable garden is producing I will use fresh tomatoes but during this time of year I prefer to stick with Muir Glen canned tomatoes. We largely cut grains from our diets months and months ago, we also stopped buying any form of potatoes a few months back, now we’ve started cutting back on meat. Just yesterday I used some left over butternut squash soup, mixed in mushrokma, knions, broccoli and chickpeas.

Personally I could never stand the taste of canned Campbells Tomato Soup so I made my version a little healthier than ones I’ve made in restaurants. People are starting to get more creative with chickpeas, squash and protein-packed vegetables! Honestly, this is likely the biggest reason I’ve spent so much time on Pinterest looking for recipes, so that we can continue to avoid the pasta while also having hearty and fulfilling meals.
