I was trying to think up all these different, crazy snack recipes, adding in this ingredient or that but then I thought how when I look for new recipes to try, I usually go straight for the one with the shortest ingredient list!
There are probably a million recipes, if you can even call it that, very similar to this one, but raw date balls will always be one of my favourite treats to keep on hand, so here’s another super simple, super tasty treat to add to your collection. These are pretty similar to protein bars I make, but with dates instead of protein powder and peanut butter (and the protein bars don’t have chocolate chips). Sometimes you probably find yourself  in a hurry and have no time to prepare something to eat. Meghan is an ethical vegan with a passion for creating delicious plant-based recipes which are gluten-free, refined sugar-free and comprised only of natural, wholesome ingredients. Cookies are by far one of the most common comfort foods and almost everybody loves them, but unfortunately it’s very difficult to buy vegan and gluten-free cookies which are also refined sugar-free.

As you can see in the photo above, this bar carries that unattractive, gummy fruit puree look that a lot of bars carry. As I bit into this and chewed through it, the texture of it reminded me of a raisin in that it was gummy, soft and chewy. Press into the bottom of a regular size bread pan lined with plastic wrap, or container of your choice. Chill in the fridge for a few hours. In a food processor grind the cashews into a flour. Add the dates, almond butter (or peanut butter and coconut oil) and sea salt and process until it sticks together. Press the “dough” into the lined cake pan, sprinkle the top with almond (press almond pieces into the “dough”). If you’d like little green specs, blend all but the lemon balm until smooth and creamy.
To make the frosting: blend all ingredients in your high speed blender until smooth, adding as little water as possible. Assembly: Press half the cake mix into the bottom of an adjustable spring-form pan, mine was about 6 inches.

Mix all ingredients together in a bowl with hands, till dough is uniformly sticky and clumps together easily.

I love these stored in the freezer, the chocolate chips get extra crunchy but the dates and almonds stay soft and gooey. These make an ideal pre-workout snack thanks to the carbohydrates from the dates and fat and protein from the almonds, and the chocolate chips, well they're just for fun! Scoop out a tablespoon of the mixture and roll it in your hands to form a ball, then place it on a plate or baking try and press down on it to form a cookie shape. However it’s hard to keep a healthy diet and a slim figure with all those yummy cakes and sweets that come our way all day long.
Add cocoa, salt and blend again for 1-2 minutes. Slowly add dates while the processor is running.
You can add a little water, if necessary to keep the ingredients moving so they blend thoroughly. If you need to, add a touch more agave. Scoop in tablespoons onto a dehydrator tray lined with teflex. I love raw desserts – they taste amazing but are actually super healthy and easily made gluten-free, vegan and sugar-free. If you do that by accident you can put the dough in the fridge and it should firm back up and you could maybe roll it into bite sized balls instead of bars. After her infant son was diagnosed with a gluten allergy, she dedicated herself to learning to make meals the whole family would love.

I was thinking of adding oats and almond butter but why not keep it super simple if they already taste amazing? They only contain five ingredients and they require very little time and effort to make, but they’re still incredibly tasty. I have a similar recipe on my site using peanut butter, but I love your combo of almonds and pecans. Technically they aren’t 100% raw if you use regular rolled oats but fully raw oats are available to buy if you want to use those.
Try one set at 325 degrees for twenty minutes—but do experiment with the time, since I haven’t tried it myself yet.
Add the chocolate chips and pulse just until incorporated.Line a sheet pan with parchment paper and pour the dough out onto it. I recently posted a few new raw bar recipes that you can find by clicking here…there is a Thin Mint one that will blow your mind if you are a Girl Scout Cookie lover! Roll into tablespoon sized balls & place them on an ungreased cookie sheet (or on a sheet of parchment paper on the baking sheet), then flatten them out a bit with your palm. Add the water and pulse together until the dough will hold together when pressed in your hand. I let it set in the fridge overnight, then frosted the whole thing, but you can do it right away if you want.
You’ll be the talk of the group after everyone gets a bite of any of these 8 recipes. Best part of all, for me anyways, these snazzy little bars come together in about 10 minutes which is more than I can say for a batch of cookies!
Shape the dough into one large rectangular brick and refrigerate until firm, about 5-10 minutes. The dough may be a little crumbly, but just smoosh it together and it will work fine!  Bake for 7-10 minutes and that is it.
Take it out of the pan and use the remaining frosting, cover with whatever garnishes you like.
