Sometimes, the word “organic” earns its health halo: A new study finds that organic cow’s milk really is healthier than conventional milk. Organic milk contains more heart-healthy fatty acids than regular milk, says study author Charles Benbrook, a research professor at the Center for Sustaining Agriculture and Natural Resources at Washington State University. The reason organic milk is healthier comes down to its ratio of omega-6 to omega-3 fatty acids, which is lower than in regular milk. If organic milk is out of your budget, conventional milk is still OK – but choose whole milk, rather than skim or 2 percent. Even if you don’t consume dairy, Benbrook says the larger message here is to try to cut back on foods that are very high in soybean or corn oil, both of which have high omega-6 to omega-3 ratios – things like fried foods, or chips. Organic milk also has a longer shelf life because it is treated twice with ultrahigh temperature, according to Scientific American.  This kills any bacteria present in the milk.

According to researchers, organic milk contains 62 percent more omega-3 fatty acids, which have been associated with protection against heart disease and stroke, and potentially against cancer and autoimmune conditions, too. Conventional milk contains more omega-6s, around which evidence is less clear.
What is agreed upon is that, while both are important to our health,we should be eating more omega-3s and less omega-6s. The WSU researchers tested nearly 400 samples of organic and conventional milk over 18 months. A diet containing too many omega-6 fatty acids and not enough omega-3s has been linked to heart disease, as well as cancer, inflammation and autoimmune diseases. They have the same amount of fat (depending on which milk you buy), and same nutritional value.

That’s because your gut converts omega-6s to arachidonic acid, which can cause inflammation. But the anti-inflammatory powers of omega-3s help to counterbalance that reaction, which is why keeping that ratio low is so important.
