The Edible Education 101 course was created in conjunction with the 40th-anniversary celebration of Chez Panisse Restaurant and Cafe in Berkeley, California. The 2016 course is presented by UC Berkeley’s College of Natural Resources and led by Mark Bittman.

Moving, Munching, and Reading Around MyPlate" is a nutrition and literacy curriculum that helps children become aware of food and nutrition by reading storybooks with food-related themes and then participating in hands-on nutrition education and physical activities. Promoting School Wellness" is a nutrition education curriculum that makes the connection between local food systems, garden-based learning, school food service and the establishment of healthy habits. Be Active!" is a nutrition curriculum where students examine the key nutrients provided by each of the five food groups of MyPlate and learn how to make healthy choices.
Students from kindergarten through eighth grade are given the tools to plant and care for a garden. This yummy curriculum introduces the importance of eating from all five food groups using the MyPlate icon and a variety of handsa€“on activities.
Children at this age are assuming more responsibility for their own health and well-being. Nine lessons are designed to teach children and their families about nutrition by relating each lesson to a garden activity.
The research study found that the participants of the program had adopted healthier behaviors and were more engaged in discussions based on nutrition and health.
It would be great if, not just health and nutrition, the role and importance of education could be realized in other sectors as well.

In addition, educational resources are available to assist individuals and families in identifying local food resources, answering food handling concerns and understanding dietary needs. The course is a unique hybrid: a public lecture series and a for-credit class for UC Berkeley students. The Edible Education series has been offered to undergraduate students and members of the general public for five semesters since 2011. Encouraging healthy eating and ample physical activity during the preschool years will have long-term benefits. Through this curriculum preschoolers will make the connection between eating healthy foods and being able to Go, Glow and Grow.
