We spoke to Sue Macdonald, midwife at the UK's Royal College of Midwives to ask her about the best diet during pregnancy. She told us that eating healthily while you are pregnant is good for many reasons - it is healthy for your baby, for your body and it means that you'll have a healthy eating pattern when your baby arrives.
Sue told us that you could write a whole book on this topic, but she gave us a little introduction to the foods that we should have more of when we are pregnant, the ones we should avoid, which vitamins are good to take and how many extra calories we really should be eating when pregnant.
Women are often encouraged to “eat for two” during pregnancy, but this shouldn’t be taken too literally. Surprisingly there is only a small increase in the amount of energy (calories) you need to eat while you are pregnant. As everyone has a varying metabolism and activity levels, you may find you need more energy or are still hungry. To maintain a healthy weight in pregnancy our Healthy Eating 7 Day Pregnancy Plan ranges between  1500 – 1785 calories a day and as a guide we would we recommend not going lower than 6500 kilojoules (1500 calories) per day. However, everyone has a different metabolism and you can calculate yours below to determine how many your body needs below so you can adjust your calorie intake accordingly. Particularly during the first trimester, I just didn’t feel like standing on my feet, planning meals, chopping vegetables, baking anything, or cooking.
The great temptation there is, of course, to grab something bad for me out of a box or bag, or to eat out for dinner (or both!).
He said that I should just buy chicken breasts once a week, well-raised, and just not look at the cost. I often kept it super simple and just baked the chicken, perhaps with spaghetti sauce and mozzarella cheese or just herbed seasonings, served with a baked potato.
Particularly in the first trimester and early second trimester when we went grain-free, I was craving butter in massive quantities. I typically made an extra-large quantity of baked potatoes once a week using the restaurant-style baked potatoes instructions.

I’ll work on that issue over the next few months and see what I come up with (maybe a free copy of The Everything Beans Book to anyone who brings me a meal, as long as the meal is from the book???). For now, I’m just thinking about some stockpiles I want to have when baby is born and hoping I’ll have room in the freezer after summer fruit picking! There are two goals here: (1) food I can prepare before baby that will wait in the freezer for after baby, and (2) food I can prepare while baby is napping that can be eaten without any preparation when baby is screaming. Once potato salad is made (and I always make a humongous bowl of it, in case you didn’t guess), I love the ease of it. I just made a triple batch of my soaked granola and my grain-free granola from Healthy Snacks to Go, completely filling my 9-tray dehydrator but making very few dishes otherwise. To plan ahead for this awesome and important assistance, I need to make sure I have plenty of ground beef and chicken breasts on hand. But there's one thing that really is worth thinking about and that's your diet during pregnancy.
