The lowdown: There seems to be something of a contemporary fashion for converting buildings with a grand history into something sleek and polished inside. Centrally located across from Bristo Square and the University of Edinburgh, the hotel successfully mixes original features and the classic-contemporary style with which Hotel du Vins have become synonymous. Our suite, Veuve Clicquot, is bigger than the average one-bedroom flat and the bed surely among the most comfortable in the land. As you'd expect from a group that has recently introduced the Bistro du Vin sub-brand, the restaurant offers a menu of very well executed bistro classics (the chicken liver parfait is particularly delicious and those who think crepes suzette flambe is old fashioned and dated would do well to sample those on offer here), and of course a very switched-on sommelier offers advice on a brilliant wine list. The not so good: The suites are very big but standard rooms can be a little on the small side. The verdict: Hotel du Vin expertly treads the line between providing excellent hotel service and a feeling of a home-from-home.
