After medications failed to treat my autoimmune disease, I turned to nutrition to address my symptoms naturally. The gut is the second brain of our bodies and according to Ayurvedic Medicine, all disease begins and ends in the digestive system. Sauerkraut, kombucha, and kefirs are most of our fermented staples, but I recently dug into my memories and family’s recipes for a revival. It’s easy to get sauerkraut now at the market and there’s no denial that I am an aficionada of GT’s Synergy kombucha—there’s convenience coupled with our society’s gripping of time.
Making fermented foods for me now has become a time to not only prepare something that will aid in restoring my body but also to return—to gathering food by its roots, of sensing it fully, of creating intentionally, and consuming mindfully.
Print Probiotic Fermented Apples   Fermented fruits are a traditional and medicinal food. I recently graduated from Mount Holyoke College, where I buried my nose in stacks of Medical Anthropology, English Literature, + Art history books in ivory towers. I have not used kombucha for it—I would think that it would produce more like a flavoured kombucha.
If using fresh whey rather than the starter cultures (Caldwell’s), how much should be used? I have not used whey, but it should be the same amount as there is also salt to culture it. Kosher salt should work as long as there are no additives, but I would suggest celtic or pink salt if you are able to get some! I often use live kombucha or water kefir (the finished liquid beverage) as the starter for fermented fruits. That should be ok—I simply recommended Weck to avoid BPA and phthalate lining that jars have.
The Gerson therapy explains that the main reason of cancer is an imbalance between sodium and potassium because the salt disrupt the hydration of our cells.
Therefore it would be nice that someone experiment a new form of lactofermentation without salt. I’ve been doing sauerkraut and kefir for awhile now but this sounds amazing – I bet it would be incredible with honeycrisps! Before pasteurization, refrigeration, and freezing, vegetables, fruits, dairy, and drinks were preserved for long storage through the use of culturing or lacto-fermentation. Lacto-fermentation causes the lactic acid-producing bacteria or lactobacilli to convert the sugar and starches in fruits and vegetables into lactic acid. This lactic acid bacteria also acts as a natural food preservative that prevents bad bacteria from growing and causing food to spoil.
Cultured or lacto-fermented foods and beverages are an excellent source of healthy microflora including: Lactobacillus Plantarum, Lactoccus Lactis, Lactoccus Cremoris, Bifidobacterium, and Acidophilus which all help maintain a healthy digestive and eliminative system.
Cultured or lacto-fermented foods and beverages provide excellent protection for the body against pathogenic yeasts, fungus, viruses, parasites, and the effects of antibiotics.

Production of organic acids which improve the digestive PH and help regulate acidity levels. There are a huge variety of fermented foods and beverages to choose from but it is also important to identify which are the best foods to serve for our kids, kids can be very picky and hard to feed, a little creativity can go a long way. Kombucha – This fermented tea has incredible gut health benefits and need not be expensive as you can make it at home for around $1 per litre. Water Kefir – Another option for a fizzy drink for children, it is important to note that sugar remains in Water Kefir where-as the sugar in Kombucha is eaten up during the fermentation process, therefore this is a good step towards Kombucha and to readjust the taste spuds if your child is used to a sweeter pallet.

Kefir Cheese – The most amazing a delicious array of cheeses that are actually good for your gut and you can flavor them with anything you like. I remember how as a child growing up in Istanbul, my grandmother used to pickle, ferment, and dry any and all the bounty she would gather from her garden.
Most of us opt for these because we have conditioned ourselves to prioritise work or chores over our pleasures.
The surrender that results from taking this time is sacred and profound—the chemical re-wiring that results is then infused into what we create. I love putting in a dollop of this on coconut yoghurt, another cultured food I make at home for which the recipe is available on my site.
A power-packed source of probiotics, these cultured apples have a pleasantly sweet and slightly tangy flavor. Regular table salt has iodine, anti-caking agents, and even form of sugar called dextrose (derived from corn) added to it that theoretically affects the growth of healthy bacteria. Since fruits have a high amount of carbohydrates, the alcohol content of these would be higher than the other fermented foods we regularly consume such as sauerkraut. As fermented foods get tangier, you might want to try a sweeter variety such as Honeycrisp and see how you like the flavour. My daughter had sever dairy allergy and I am struggling to find a culture starter that is devoid of my dairy protein. I enjoy making cabbage sauerkraut, fruit chutneys, fruit butters, fruit compotes, ginger carrots, coconut kefir, beet kvass, and salsa every month. Fermenting or culturing foods is an ancient skill that has been used in a wide variety of different countries for years. For those children that suffers neurobehavioral disorders such as hyperactivity, processing disorders, and ADHD – diet and nutrition is often a major area of concern. Replacing sugar filled soft drinks with Kombucha is the first step we recommend when trying to assist your child to maintain a healthy gut environment. Threads of beans used to hang in a sunny corner, slowly drying in the soft afternoon light.

We push away taking the time to nourish our bodies and our minds by creating such memories through the process of making them at home. Not only does the food tastes better but, with that quiet mind and heightened senses, we are also are able to taste it better. However, it’s important to note that, like sauerkraut, this is to be used as a small condiment and not consumed by the spoonfuls.
Although I have not used probiotic capsules for this, I would go for about 20 billion’s worth in addition to the salt. Although I have not used probiotic capsules for this, I would go for about 20 billion’s worth in addition to the salt. Gut health plays a principal role in influencing brain activity and it has been said that the gut is the second brain of the body.

I believe the sign-up is coming up soon and it would be great to hear from a grad of the program. It took months to recover and none of the doctors had a clue about how to heal my gut so I could digest food properly again!
If you do choose to use nuts or dried fruit, subtract that amount from the amount of apples you use. I just recently finished the Health Coach program with the Institute for Integrative Nutrition and I’m looking to further my knowledge. If you don’t want to make cultured foods, I would recommend purchasing cultured vegetables from Rejuvenative Foods and Immunitrition. Place the ingredients into your fermentation vessel and pack it all in, making sure to reduce any air bubbles. It sounds to me as though if I had known about these kinds of foods in the first place I could have prevented and healed a lot of the damage done years before (I had a shocking diet of pretty much coca cola when I was anorexic)! I try not to mush the pieces since I like to keep the integrity of the apples, but pack it however you'd like it in terms of texture. I love Ohio Stoneware crocks, but they tend to run too large for a small helping of fermented fruits—I often use a bigger crock for sauerkraut. Any fermentation vessel must be stoneware or glass, without any BPA lining or treated with phthalate. Once you have your vessel with your preferred ingredients, fill the jar with pure water, leaving about an inch of space for expansion. The timing is dependent on the temperature of your house—it will take a shorter amount of time for fermentation to take place if the surroundings are above 75 degrees Fahrenheit. Don't open the jar as it's fermenting since air and sunlight will get in the way of the fermentation process. It's ready to eat when it smells and tastes slightly tangy but not sour, pungent, or "off." Let your nose guide you—if it smells so strong that a whiff is enough, you probably don't want to eat it. Once your creation is ready to your taste, refrigerate it to slow down fermentation and consume within two months. Not only should you avoid using it for daily consumption, table salt does not lead to fermentation.
