The kefir itself, once you take the grains out, is actually more nutritious if you let it stand (this can be in the fridge) for another 24 hours. You do the kefir like usual, taking out the grains to use in the next batch, then you drain it. I’ve made a similar kind of cheese, but using lemon juice instead of vinegar to curdle it.
