Hopefully by now you’ve all heard about the benefits of probiotics (the word literally means pro-life). Probiotics are essential for improving immune system function, digestive issues, absorption of nutrients, increased energy levels, allergies, liver function, quality of hair, skin & nails, and also help to promote a nice flat belly!
Making your own cultured foods is a great way to get an abundance of wonderful probiotics into your diet!
Add soaked almonds, young coconut meat, coconut water from 1 coconut, and probiotics to blender and blend until smooth in a high speed blender (I use a VitaMix). Cover your glass bowl with a paper towel or clean dish towel and let sit at least 3-4 hours. You’ll want to keep about 2 tablespoons of the original mixture as a starter to add to the next batch. Savory: Use the mixture as a base for creamy sauces, homemade ranch dip, or as a replacement for sour cream. You can enjoy 1 to 2 cups of coconut yogurt each day ?? This is such a fun, easy, and inexpensive way to make probiotics a part of your daily routine. I’m not sure if I can get these coconuts in Ohio, but going to look for them next trip to the store.
Hi, Linda – How much filtered water should I use if I just want to make almond yogurt? HI!Is the coconut meat that you refer to be substituted for the shredded coconut package you find at the health food stores? April 14, 2014 by Ellie 4 Comments When I was a kid, I fell into a brick of cheese and this is where the love story began. Once you have made rejuvelac, you can prepare a batch of cultured cashew cream cheese that you season with fresh herbs and garlic. An easy way to get your probiotics in each day is to drink my all-time favorite  probiotic drink- Kevita! I love these sparkling probiotic drinks so much, but they are not cheap, so I embarked on making my own cultured drinks. Making cultured drinks can be labor intensive, feel complicated and possibly scary but let go of the fear. 2 to 4 cups fresh Young Coconut Water or you can buy raw unpasteurized coconut water such as Harmless Harvest. Cover the jar loosely and allow the kefir grains to culture the coconut water for 24 to 48 hours (the longer the brew, the more healthy bacteria you have cultured). To make lemon or lime coconut water kefir, add ? cup lemon or lime juice to 1 quart of coconut water kefir.

To make cherry coconut water kefir, add ? cup cherry concentrate to 1 quart of coconut water kefir.
So besides making your own Coconut Kefir Drink, I also suggest whipping up a pitcher of my favorite Detox Water.
It is best to use organic cabbage; one head of cabbage will yield about 1 quart of homemade sauerkraut. While there is nothing wrong with making sauerkraut in jars, if you find that you like making sauerkraut, you may want to invest in a larger crock dedicated to the process. The Harsch Gairtopf Fermenting Crock Pot uses ceramic weight stones to eliminate all chance of mold. Can I open the sauerkraut jar during the fermentation process (second day) without change of spoil it?
How I know that my sauerkraut has the right flavor…I’m kind of scare to eat it!
You should be able to leave in on the counter for a few more days (maybe even longer) with no problem.
Soaking the nuts is crucial as this will activate the dormant enzymes and release the nutrients. I hold my strainer in one hand and use a spatula in the other to stir and sift the mixture through. This will remove any excess fibers and almond skins and will help you achieve a nice creamy texture. It is her passion to help you know what it feels like to glow, radiate, THRIVE, and SHINE from the inside out!! I have recommended your site to all of the ladies in my young women’s hysterectomy support group here on FB. There is no way you could scoop it out so you must use the young Thai coconuts that have the large white husks as pictured.
Thank you for all the help, just to let you know, my girlfriend and I used the tougher brown coconuts instead of the thai variety and it worked out just fine ?? there is a quite easy method to getting the meat out.
We’re in tropical Asia to immerse my child in her Mandarin, so we have plenty of coconuts, so I want to try this.
I make LOTS of lacto-fermented food with my whey ( I make my own goat milk kefir, goat cheese, salsa, kvass, etc) and always use whey.
Rejuvelac is a fermented liquid that is filled with natural probiotics, lactic acid, vitamins and minerals. You can really play with various types of herbs and spices that you use in this cheese depending on what you have on hand and your preferences. When you purchase items from these links, I receive a small percentage from the affiliate program at no cost to you. As the temperature rises and you are spending more time outside, it is important to keep your body hydrated. Yep, I am a water pusher and if you are trying to shed a few pounds quickly then upping your water intake will help. A few of its many healthy attributes: it is high in probiotics that aid the digestive and immune systems, it contains all the enzymes inherent in raw foods, and it has lots of vitamin C.

It’s too bad I somehow forgot about making sauerkraut when I planted my garden, and I have no homegrown cabbage…oh, well, there is always next year! In a large non-metal bowl, mix the cabbage with the caraway seeds, sea salt (and whey, if using).
Spoon the cabbage into a quart-sized, wide-mouth mason jar, and as you do so, press down firmly with a pounder (the back of a wooden spoon will also do) until the juices come to the top of the cabbage. Cover tightly and keep at room temperature for about three days before transferring to the refrigerator. It also has a special water sealing system that allows fermentation gasses to escape without allowing air to enter. This could be in supplement form (see my list of recommended brands at the bottom of this post) or in the form of cultured foods like this delicious Coconut Yogurt!
You can watch the original video on how to make this recipe here or see my variation below. You will not need to use probiotic powder if you are using a small amount from the previous batch. You just need to use a knife to crack it open and then cut a little section out in the shape of an A and once u have that piece out, the rest comes out of the outer shell quite easily. After reading the Artisan Vegan Cheese cookbook, I finally decided to prepare some cashew cream cheese.
It helps with digestion and is a commonly used beverage in the raw diet. I explained how to make rejuvelac from sprouted quinoa here.
The creaminess of the cheese, along with its tangy taste make it the perfect spread for a grilled vegetable sandwich, a vegetable wrap or simply a topping for homemade gluten-free crackers.
The addition of healthy bacteria to your belly greatly improves your digestion, improves your body’s ability to absorb nutrients, boosts your immune system, reduces the levels of toxicity in your body, and also supports your weight loss goals. You can eat your homemade lacto-fermented sauerkraut right away, but the flavor gets even better over time.
I am a published author and I create and photograph seasonally inspired recipes here at Healthy Green Kitchen.
The result is outstanding: you get a really smooth and silky cheese that could easily be mistaken for dairy cream cheese. You can make cashew cheese with lemon juice and it is great when you are in a hurry, but I personally prefer to culture it with rejuvelac because you really get all the benefits of enzymes and probiotics! I am also a body positive, habit-focused nutrition and strength coach, as well as a competitive powerlifter.
I will definitely use this method to experiment and create more types of vegan cheeses in the future!
Making cashew cheese is a several step process if you prepare your own homemade rejuvelac, but it is so delicious it makes it all worth it. My house is quite cold so I was told it’s not a good idea to rely on room temperature.
