Type 2 diabetes occurs when your cells have become insulin resistant or your body doesn’t produce enough insulin to keep you healthy. Since diabetes is a disease that affects your body's ability to use glucose, let's start by looking at what glucose is and how your body controls it. When you eat food, glucose gets absorbed from your intestines and distributed by the bloodstream to all of the cells in your body.
To maintain a constant blood-glucose level, your body relies on two hormones produced in the pancreas that have opposite actions: insulin and glucagon. Insulin is made and secreted by the beta cells of the pancreatic islets, small islands of endocrine cells in the pancreas.
As such, insulin stores nutrients right after a meal by reducing the concentrations of glucose, fatty acids and amino acids in the bloodstream. The pancreas detects the fall in the blood glucose level and releases another hormone, glucagon. The glycemic index (GI) is a scale used to rank the effect a foods carbohydrates has on raising blood glucose levels after eating.
Glucose is normally chosen as the reference food (see GI measurement) as it has the fastest effect of raising blood glucose levels when consumed.
Low GI foods rank between 0-55, moderate GI foods between 56-69 and high GI foods are over 70. Foods positioned low down on the scale are those which are slowly digested and absorbed by the body. Referred to as low GI foods, they produce gradual rises in insulin and blood glucose levels after eating. High GI foods are quickly digested and absorbed by the body and cause marked fluctuations in blood sugar and insulin levels.

However the high GI food gives rise to a much higher level of blood glucose compared to a low GI food. After 2 hours blood glucose levels are significantly reduced being much closer to baseline before the food was consumed. After 2 hours the blood glucose levels from high GI food is still elevated more than the blood glucose level from the low GI food. When this happens the liver has problems in converting glycogen (the form in which blood sugar is stored) into glucose which is the more active form that is used by the body.

Your body tries to keep a constant supply of glucose for your cells by maintaining a constant glucose concentration in your blood -- otherwise, your cells would have more than enough glucose right after a meal and starve in between meals and overnight. Since cortisol is responsible for this function, low cortisol levels compromise the sugar levels, leading to imbalances. While this quickly increases blood sugar levels resulting in a spike and relieves the symptoms, the action lasts for a short time of between 45 and 90 minutes. However, when there are problems with the adrenals and cortisol, the availability of glucose is affected. When your blood sugar goes low, you eat more of high calorie food, which is in turn stored as fat.
