The dilemma with organic wines (and what sets them apart from other organic foods) is the importance of sulphur-dioxide (SO2) in the winemaking process. Organic wines from the US must not add sulfites, which in most scenarios greatly reduces a wine’s shelf life and, in some cases, can substantially change the flavor. Non-Organic wines can use chemicals like herbicides and fungicides in the vineyards and other additives (like sulfur or Mega Purple) in a wine.
We were curious about what exactly vineyards are using and it turns out there is a reporting agency that tracks pesticide use in agricultural areas.
Fortunately there is a solution that drinkers of American wines should know about and it’s called ‘Made with Organically Grown Grapes’. A certification of sustainability for California wines that restricts the use of bad chemicals in vineyards. A certification program created in the Northwest that focuses on bolstering riparian areas and reducing farm run off into streams and rivers. Since we do not make organic wine I am not really that limited in how much SO2 [sulphur] I use in the winemaking process.

If you walk around our vineyard right now you would definitely think it is more alive compared to our neighbors who are not organic. It is definitely more challenging to farm for top quality Pinot Noir organically and this comes mostly in not being able to use synthetic herbicides and synthetic fertilizers.

Alcohol, all processed foods, anger, barley, bread, cake, canned fruit, cereals, chickpeas, chocolate, cigarettes, coffee, complaining, cooked grains (except millet and quinoa), corn, cornstarch, dairy products, drugs, eggs, foods cooked with oils, glazed or sulfured fruits, ketchup, legumes, lentils, meat, fish, birds, shellfish, mustard, nuts, seeds, beans, oatmeal, pasta, black pepper, popcorn, salt, soda crackers, soft drinks, soy products, stress, white and processed sugar, artificial sweeteners, black tea, overcooked vegetables, distilled vinegar, all forms of wheat. When what we digest is overly acidic, the body has to deplete its own alkaline reserves (also needed for exercise, illness and stress) to handle these acids. A simple way to eat well: just stick to a wide variety of whole, unprocessed foods (vegetables, fruits, nuts and seeds, whole grains) with small amounts of organic flesh foods, a daily dose of fermented veggies (like raw sauerkraut or kim chi). I would be very concerned about wine microbial stability if I could not add any SO2 to the wine. This does pose a challenge and what this usually means is that during my annual organic audit, I have to show the auditor that I am keeping a minimum distance between my neighbors use of synthetic chemicals and my organic vineyard.


I do not use herbicides so I am use to seeing more vegetation under my vines compared to my neighbors or to when I use to use round-up. What I do think organic farming does is it is better stewardship of the land, and will allow us to farm for quality for many generations to come. With over 400 species of bacteria living inside our intestines, it's very important that we keep the levels of good and bad bacteria in balance. The Helios brand of kefir also tastes like a liquid version of yogurt, most are sweet and pleasantly tangy, while the Plain tastes more like a sour cream. Yogurt contains "transient" beneficial bacteria, meaning they only exist temporarily in our bodies, to keep your digestive system clean and provide food for the friendly bacteria that already are present.
It is important that our diet is slightly more alkaline-forming than acid as this is the environment which is most conducive to health and the body’s natural repair process.
If an acid condition persists, however, the body will draw minerals from other areas to try to neutralize the situation. When we eat, drink and take too many acid-forming substances (including thoughts and emotions) the body signals to form mucus in our stomach, small intestine, and colon as a way to protect and maintain the alkaline pH balance needed for it to function properly. I was told that when I started to farm organically I would see a change after farming organically for 10 years. The curd size of Kefir is smaller than yogurt, so it's also easier to digest, making it an ideal food for babies, the elderly, and anyone with digestive health problems. In fact,an excellent way to combat acidosis would be to drink water with fresh lemon juice or squeezed lemon. When this happens often, the mucus keeps coming and layering on top of itself, forming a hardened layer of mucoid plaque, while trapping the toxic substances like drugs, chemicals and negative emotions.
I fear that I have not noticed any drastic changes in my vineyard today compared to back in 2001. Chronic over-acidity removes oxygen from the blood and can result in lowered immunity and premature aging, kidney stone formation, muscle loss, back pain, gout and other joint diseases.
Over acidity also can produce that tired, headachy, fuzzy-headed feeling many people get, especially after eating.
