For the holidays, and the many low carb baking recipes, you need to get almond flour (I have tried this one) (update: all out, and product is discontinued) or this Bob's Red Mill Almond Flour (I haven't tried it so I don't know how fine the grind is) to get the white looking sponge cake left, and not almond meal, which is a thicker grind! If you don't mind the color, try this Now Natural Almond Flour, which is probably more healthy, but again, I haven't tried it.
In a small bowl, mix the almond flour, flax meal, protein powder, powdered peanut butter, baking powder, salt and Splenda, if using. To the remaining almond flour mixture, add the baking powder, baking soda, sour cream, heavy cream, vanilla and whole egg.


In the same mixing bowl, whisk the cream cheese, 2 tablespoons granular Splenda or equivalent liquid, almond extract and the egg white until smooth. This little cake has a nice peanut butter flavor and is lower in fat than if you used regular peanut butter instead of the peanut butter powder. The carb counts are approximate because different brands of sugar free jam have different counts.
I also didn't bother to list different counts for liquid vs granular Splenda because the granular only adds 3 carbs to the whole cake and you do need to use granular in the batter anyway.
