What could be easier than tossing all of the vegetables in the slow cooker, turning it on low and just going on about your business during the day. I know I’ve said it time and time again, but slow cookers are one of the most brilliant inventions for busy families. Of course, if you don’t have a slow cooker, you could whip this soup up in no time on the stove as well. Vegetable soup is so healthy and cooking it in the slow cooker is so smart and time saving! I think I make almost anything in my crockpot, I love it This looks like a great way to get veggies on the table for dinner!
I forget that the crock pot can be used when you DON’T have all day to cook something, too!

Great idea for vegetables and I never thought about the fact that the crockpot is good because it doesn’t heat up the house like an oven does in the summer. Carrots can sometimes take longer to cook than other veggies – so just make sure the pieces are small. I prepped everything this morning, and could hardly wait for the slow cooker to do its work for dinner tonight. I’m a huge fan of root veggies – perfect stew and I love the garnish of sage leaves! There’s just something about how the flavors all meld together when this vegetable soup has been bubbling away in the slow cooker all day. I wonder if you could cook up a big batch of veggies like this, put it into smaller packages and freeze. I have two crock pots so that I can cook a whole chicken and something else at the same time.

I would cook them in a crock on low for a few hours with some butter and seasonings until they’re tender. I ended up adding a little more broth than was called for and cooked it on high for 3-4 hours instead of 6 hours on low. Vegetable Soup has always been one of my favorites and this slow cooker version is about is easy as they come. Then later you would have a serving of veggies that are already buttery and spiced to just quickly reheat. This has a wonderful flavor but I should have cut the vegetables in bigger chunks because I cooked them for 6 hours and they tried to mush on me.
