“
The best place to eat traditional
Romanian food is in the home. I adore
ciorba de perisoare
(
sour soup with
meatballs),
ardei umpluti
(
stuffed
peppers),
mici
(
pork and mutton
meatballs) and
salata de boeuf
(
a
combination of finely chopped beef or
chicken and root vegetables, folded
in mayonnaise). The best Romanian
cook in the country, by the way, is my
mother-in-law. There is no restaurant
better than her kitchen table.”

crush the herbs for their sorbet with the
use of liquid nitrogen, or smoking a
salmon in front of them, we like to add
something to the experience. We can even
sprinkle the essence of Romanian truffles
on your table while they’re enjoying a truffle
soup. We want them to notice the details,
to see that we go that bit further. That is
how fine dining should be.”
