Hearty palms
At Bicol markets, the vegetable section displays an array of
shredded carrots, cabbages, bamboo shoots (
labong
)
and
piths of coconut (
ubod
)
and banana (
ubad
).
Tossed together
to make a salad or folded within an egg or rice wrapper,
it becomes
lumpia,
or our local version of a spring roll.
Sometimes we just do away with the wrapper altogether for
what is known as
lumpiang hubad.
A bowl of lettuce leaf is
filled with blanched veggie strips then drenched in lumpia
sauce.
Yet another way is to use ubod slices with strips of carrots,
red and green bell peppers, turnips. Add bits of pomelo
sections before pouring on a honeyed fish sauce dressing for
a refreshing summery dish.
