Covering the sprawl between the
Cordillera Mountains and the West
Philippine Sea, the region is exposed to
extreme seasonal changes. Its terrain is
largely flat and dry, but “flat” and “dry” do
not describe everything else about it, least
of all its cuisine, where several sumptuous
icons of the Filipino table came from.
Environmental conditions have inspired

techniques too, resulting in a number of
