Amazon Cod with Pomegranate and Plum Jus
Yields 4 servings
Amazon Cod
Cod, 4-6 ounce fillets
Olive oil
Sea salt and pepper
Directions

Pre-heat grill pan over medium-high heat,
brush with olive oil

Generously season the fish with salt and
pepper

Grill on both sides until done, approximately
3-4
minutes per side

Serve with plum jus sauce
Pomegranate and Plum Jus
Pickled Plums
4
dried plums, diced small
2
tablespoons rice vinegar
2
tablespoons red wine vinegar
¼
teaspoon sugar
1
teaspoon mint, finely chopped
1
teaspoon coriander seeds, crushed
1
small red chile pepper, finely chopped
Directions
Mix all and soak overnight under refrigeration
Pomegranate Reduction
1 ½
cups pomegranate juice
½
cup verjus
1
tablespoon shallots
1
tablespoon black peppercorns
4
large Thai basil leaves
Directions
1
Place pomegranate juice, verjus, shallots and
black peppercorns in a pot over medium high
heat, and reduce by one half

Remove from stove and steep with Thai basil
for one hour, covered at room temperature

Drain plums and place in a blender with the
pomegranate reduction, blend until smooth

Heat for serving and adjust seasoning with
salt and pepper, to taste

Chef’s Tip
Verjus is an acidic, sour liquid made from
unripe fruit. It is used in sauces to heighten
flavor, much like the use of lemon juice
or vinegar. If verjus is not available, use
unflavored rice wine vinegar or dry white
wine as a substitute.

side of the Sauvignon grape), this South African wine is refreshing and bracing. As citrus flavors are excellent
with fish, this wine would be a great pairing with this recipe.
