Asian-style Noodle Salad

Vegetable Salad
cup prepared sesame vinaigrette

tablespoons sweet chile sauce

tablespoon lemon juice
1
tablespoon soy sauce
½
cup green asparagus, 1 ½ inch
bias cut and blanched
½
cup snow peas, 1 ½ inch bias cut

cup carrots, matchstick cut
¼
cup red bell pepper, 1 ½ inch julienned
½
cup green onions, bias cut
¼
cup cilantro, chopped

teaspoons sesame seeds
Directions

In a large bowl, whisk together the
vinaigrette, chile sauce, lemon juice
and soy sauce

Add remaining ingredients, reserving
half of the green onions for garnish
Serving Suggestion (optional)
In a large, wide bowl layer the udon noodles.
Place the vegetable salad over the noodles
and top with chicken strips. Garnish with the
remaining green onions.
Sweet Chile Chicken

Grilled chicken breasts, skinless and boneless

teaspoons sweet chile sauce
Directions

Slice the cooked chicken into strips

Mix chicken together with chile sauce

Cover and refrigerate until ready to
serve with noodles and salad
Seasoned Udon Noodles

ounce package udon noodles
1
tablespoon vegetable oil
cup prepared sesame vinaigrette

tablespoons lemon juice
2
tablespoons soy sauce
2
tablespoons sesame oil
Directions

Bring a large pot of water to a boil

Add udon noodles and cook until
tender per package directions

Drain well and rinse with cool water

Immediately toss with vegetable oil

Cover and refrigerate until chilled

When ready to serve, toss the chilled
noodles with vinaigrette, lemon juice,
soy sauce and sesame oil
