WHEN SAM POLCER
traveled to Trinidad and
Tobago for this month’s Three Perfect Days,
there were two questions every local asked

coming back for Carnival?”; the other, “Have you
tried doubles yet?” As it turned out, doubles—
an unofficial national dish of chickpea curry
wrapped in fried bread—won a new convert
quickly. “If I lived there, I’d be addicted to them,”
Polcer says. “The problem is they run out of
doubles fast—you have to be up either really
late or really early.”
