With a CV that includes time
at Taillevent in Paris, Ferran
Adrià’s legendary El Bulli and
Noma, Copenhagen’s seminal
new Nordic, where he was
sous chef, it’s no wonder this
Sicily-born talent was destined
for great things. He left Noma
in 2010 to open the rapidly
acclaimed Relæ (
restaurant-
relae.dk
)
in the north of the
Danish capital, where he also
runs the more casual wine bar,
Manfreds & Vin. Conveniently
for him, this second hangout
sits just across the street.
FOR A COSY MEAL
“
I often go to Selfish [
selfish.
dk
],”
says the chef. “It’s a small
humble sushi place, with just
six seats.” With a menu of
favourites, plus good-quality
sake, it’s an ideal – and
intimate – stopping off point.
FOR A LATE NIGHT SNACK
“
I like Kebabistan [
105
Istedgade 105, Vesterbro,
Copenhagen
],”
he says,
referring to Copenhagen’s
most famous fast-food stand.
“
It’s definitely the best kebab
in town.”
FOR A SPECIAL TRIP
“
Over the bridge in
Malmö (Sweden), Bastard
[
bastardrestaurant.se
]
is very,
very impressive,” he says. “An
innovative, rustic bistro that’s
not to be missed.”
