MAKE CASSATA
Cassata cake is to Sicilians on
Easter Sunday what chocolate
eggs are to the rest of us. Bring
a taste of Sicily home with
Antonio Carluccio’s recipe...
Ingredients
4
egg whites; 70g caster
sugar; 100g ricotta; 20ml milk;
400
ml double cream; 100g
warm honey; 100g chopped
mixed candied peel; 50g pine
nuts; 50g chopped dark
chocolate; 80g pistachios;

candied cherries

Whisk egg whites until stiff
with 50g sugar. In another
bowl fluff the ricotta. Whip
double cream until thick.

Fold honey into egg whites;
add cream and ricotta. Fold
in candied peel, pine nuts
and chocolate. Spoon into a

L bowl, cover and chill in
the freezer for 12 hours.

Blend the pistachios with
20
g sugar and 20ml milk to
make a sauce.

To unmould, dip the bowl
in hot water for a few secs.
Slice cassata and serve with
sauce and cherries.
