A Nordic feast
Festive fare from the far north
Wholesome, zingy and sometimes pickled, the dishes
that make up a Nordic Christmas feast are many and
varied. Iceland, Denmark and Sweden all have their own
festive specialities but local variations of certain key
dishes appear on Christmas tables across the region. These
include pickled herring – often presented on a special
wooden board – juicy beetroot salad, tangy lingonberry
jam, and mounds of boiled potatoes. In Denmark, the
main event is likely to be roasted pork, while Swedes tuck
into a Christmas ham and meatballs. Over in Iceland,
the main course could be salted pork ribs, hung lamb,
reindeer meatballs or even smoked puffin. Yum.
