Forget Viennese whirls, the
latest sweet treats attracting the
attention of the Austrian capital’s cool
crowd come courtesy of a pop-up bakery,
which – despite its quasi-underground
status – is attracting cake and cookie
lovers in their droves.
Launched last year, the Guerilla Bakery
(
guerillabakery.at
) is the brainchild of
three sisters – Sarah, Isabel andVanessa
– who found they often had leftovers
from their prodigious baking efforts. After
posting details of their first secret bake
sale on Facebook, they were surprised

when strangers as well as friends turned
up to buy their homemade goodies.
Since then, their popularity has grown,
with sales attracting hundreds.
“With everything that’s going on in the
world, homemade foodmade with good
ingredients and love is becoming more
popular,” says Isabel. As well as baking
the best treats in town, the Guerilla
girls have captured the green zeitgeist,
stipulating that purchasers should bring
Tupperware to save on packaging.
“We never had the intention for this to
become a big thing,” says Isabel. “We just
INGREDIENTS
250g unsalted butter
100g walnuts
100g grated coconut
One fresh pineapple
280g flour
240g sugar
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
3 eggs
100g good-quality
dark chocolate
200g grated carrots
For the icing...
125g butter
350g cream cheese
400g icing sugar
1 tsp orange juice
1 tsp orange zest

Melt the butter.
Roast the nuts and
coconut. Roughly
chop the nuts. Cut the
top and bottom off
the pineapple, peel,
then chop and purée
the fruit. Preheat oven
to 190°C. Line muffin
tins with paper liners.

Mix together flour,
sugar, baking powder,
salt and cinnamon.

Mix the eggs and
butter together, then
stir in the pineapple,
dry ingredients, nuts,
chocolate and carrots.

Divide batter evenly
among the muffin
cases. Bake for
around 20minutes,
rotating tins halfway
through, until golden.
Leave to cool.

For the icing, beat
the butter and cream
cheese until fluffy.
Reduce the speed
and add sugar, orange
juice and zest to form
a thick paste.

Ice, eat, enjoy.
