If canned tuna isn’t your thing, you can fancy up this recipe with smoked salmon or trout or even canned salmon. A simple and nutritious salad of tuna, tomatoes, spinach, white beans, mushrooms and artichoke hearts, dressed in a light vinaigrette. At that time, I was dead set in my routine of going to the gym before work 4-5 days a week. It also keeps well in the refrigerator, so you can even ahead of time if you want to. It tastes so good, it really qualifies for dessert, but its macros make it an ideal pre-workout breakfast!

It is naturally sweetened with stevia, so for those who prefer natural products, that’s another bonus. I tend to be a picky eater at lunchtime and a lot of times I'm hungry, but nothing sounds good.

While I love salads, I used to find them not very filling, especially as an entree for lunch. TIP: If you think you'll have leftovers, only salt individual portions as salting will wilt the spinach.
