You can get all of your essential nutrients* on a thoughtful plant-based diet…except for vitamin B12.
Vitamin B12 is produced by microorganisms found in the soil and in the guts of animals, which is how they end up in their flesh. Blood tests for levels of B12 may not be reliable since your body can store B12 for approximately three to five years and other variables that may skew results. Fortified foods and B12 analogues found in fermented foods, sea vegetables, and algae are unreliable at best, harmful at worst because they may block the absorption of active B12. The simplest, most cost-effective, safest, and most reliable way to avoid deficiency is to supplement. I had the opportunity to discuss the fascinating new report that was released by the Humane Research Council last week about current and former vegetarians and vegans on KFI AM 640 yesterday with Mark Thompson and Elizabeth Espinosa.
They polled over 11K adults in the United States to find out about how many current vegans and vegetarians there are as well as how many former vegans and vegetarians. They are Rice, Beans, and popcorn have become my cooked food staples, most everything else is raw. The raw fooders I do know in this area, are eating sprouted beans or grains, some of which did not agree with my sensitive gut. I don’t do well with other grains or eggs anyhow, so until I can get more educated on this raw food journey, or God sends a personal raw food chef my way, this is long ways from how I used to eat.
I would caution you against eating popcorn or any corn at all for the following reasons: 90% of corn is genetically modified, it is host to many mycotoxins which can further damage your sensitive gut and exacerbate environmental illness.
I also would urge everyone to emphasize the vegetables in their diet, whether vegetarian, vegan, raw foodist or consumers of animal products and avoid excess fruit consumption. When choosing for cheap food, know that you choose for GMOs, hormones, chemical fertilizers, pesticides and more mischief. I am tempted to buy your book but a bit puzzled by the $100 jump in your auto and transportation expense… Did you have to travel between stores or was this an unrelated expense which should have been omitted?

It is now well-established that a healthful and nutritious plant-based diet can help prevent and treat chronic diseases including heart disease, cancer and obesity. Millions of people battling the killer disease could improve their blood sugar levels by eradicating meat from their weekly shop.
Vegetarian diets are often associated with health advantages including lower blood cholesterol levels, lower risk of heart disease, lower blood pressure levels, lower risk of hypertension and now we can add preventing and reversing type 2 diabetes to that list. According to one large study, vegetarians are a third less likely to need hospital treatment for heart disease or die from it, and the diet could mean living nine additional years than you might consuming meat based diets according the the findings.
Eating a vegetable-based diet reduced levels of a key blood-protein called glycated haemoglobin (HbA1c). For people with diabetes, the higher the HbA1c in their blood, the greater the risk of developing diabetes-related complications such as nerve damage, eye problems, and heart disease. Most health experts now recognize that animals fat are problematic for a percentage of the population who has trouble metabolizing and effectively utilizing the nutrients in meat based products. Although this study shows an association between a vegetarian diet and a reduction in HbA1c, it fails to pinpoint which aspects of a vegetarian diet might have this effect, or whether other changes to diet, which don’t involve giving up meat, might also help to lower blood glucose.

Therefore, a vegetarian diet could be used as a ‘treatment alternative for type 2 diabetes, they concluded. A fruitarian diet is extremely cleansing and useful for short-term detoxification; however, existing solely on fruit for the long-term may be difficult and detrimental to health as some practitioners eventually experience severe food cravings and unpleasant symptoms signaling nutritional deficiencies.
However, the vegetarian and vegan diet is conducive to good health when it consists of a wide variety of natural foods. Among its many functions B-12 is responsible for growth in children, a healthy nervous system, and the formation of red blood cells.
Nevertheless, to avoid the possible risk of a deficiency, vegetarians and vegans should have their levels checked periodically and supplement with a sublingual form of methylcobalamin, if necessary. Cooking food at high temperatures reduces its nutrient value and destroys enzymes that would otherwise aid the body in the digestion and absorption of food. Diets that once contained very little cooked food and an abundance of fresh, raw fruits and vegetables were switched to a predominance of cooked food.
Fat content can be extremely high on a raw vegan diet when nuts, seeds, avocados and oils comprise the largest percentage of calorie intake. If left to fend for ourselves in nature with our bare hands and without the convenience of stoves, utensils, refrigeration and other modern devices we would seek out and thrive on this dietary model. An excess consumption causes the bloodstream to remain congested with fat which in turn slows sugar from reaching the cells.

Instead of eliminating foods it may be easier to initially begin adding raw vegetables and fruits to one’s daily diet. Esselstyn convincingly argues that a plant-based, oil-free diet can not only prevent and stop the progression of heart disease, but also reverse its effects. I drink a protein supplement every morning — no dairy, I drink almond milk mixed in with fruit and a protein powder so I get the protein for the day when I start the day up. Zestoretic (lisinopril and hydrochlorothiazide) is a drug made from combining two drugs, lisinopril (an angiotension converting enzyme inhibitor) and hydrochlorothiazide ( a diuretic), to form a drug used to treat hypertension. In addition, nuts (eg, almonds), viscous fibers (eg, fibers from oats and barley), soy proteins, and plant sterols, which may be part of the vegetarian diet, reduce serum lipids. I have had many bouts of swollen legs and feet as a result.  Fortunately, I am still active, but, each night as I sleep, the swelling goes down and I must get up and go to the bathroom every couple of hours. Because in modern society we sterilize our produce and do not tend to get our water from natural untainted sources like streams and creeks, we need to be mindful on a vegan diet to supplement with this crucial nutrient.
If you do not have an incoming source of B12 as a vegan, you will become deficient at some point…as approximately half of vegans have been found to be. We are not filling our plates with some protein, a side of carbohydrates, and a sprinkle of healthy fats.
One of the best ways to demonstrate this is to compare 500 calories of plant-based foods to 500 calories of animal-based foods.
Truth is, our knowledge of phytochemicals is expanding rapidly, as new ones are discovered regularly and their functions and roles in the human body are expanding exponentially. For the same 500 calories, a meal may be rich in health-promoting nutrients, as well as devoid of all the unwanted ones.
Plant-based meats, cheeses, and other products are getting more and more delicious, accessible, and healthier, showing that the food industry is rising to consumer demand…and that the public is eating it up. Add plenty of veggies to every dish you cook or prepare, on sandwiches, in wraps, stir-fries, casseroles, etc.
Visit a farmer’s market or join a CSA to promote regular accessibility to fresh, local, and seasonal produce. Consistently educate your self on veganism…learn about the health benefits, but also the other crucial benefits towards animals, the planet, and society.
Raising and slaughtering animals at the current rate of consume demand requires horrific, inhumane, torturous practices that cause immense suffering of billions of animals a year. We will need 1.5 to 2 earths in order to sustain the resources necessary for livestock production. My goal was to spend only $100 a month on food, and yet eat better and more nutritious foods than I was before. I also compared prices all over different cities, and compiled all the best ways to get the best deals on food. I used to buy all of my fruit by the box, and I thought it was the best way to get the best price. The price list tells you exactly what is the maximum amount you should spend for each type of fruit, vegetable, grain or other food. This is actually the easiest part of the program, because healthy and cheap calories can easily be obtained from root vegetables, beans, and so on. The system for eating $100 a month on a plant-based diet allows you to eat a healthy diet with fruits and vegetables.


The easiest way to do this is to write it all down on an index card and carry this with you when you go shopping.

An analysis of previous studies revealed removing animal meats from diet helps improve insulin sensitivity. In fact, Americans have long been dogmatic in their regard for the quality and quantity of this nutrient since its discovery in 1839.
This has led to an over consumption of animal protein in most western diets and the mistaken belief that plants are an inferior source of the coveted nutrient. While there are numerous accounts of healing from cancer by following a macrobiotic diet, several long-term practitioners, teachers and authors espousing the lifestyle have ironically succumbed to the disease (2). Unlike other natural food sources, fruit is harvested without killing the plant and is therefore considered by the fruitarian to be the most sustainable, natural and humane diet. Common practices among raw foodists include warming, drying, and dehydrating food up to approximately 115 degrees Fahrenheit as this low heat will not compromise enzyme activity.
Today the concept of a high raw diet is foreign to most people, although it continues to regain popularity and credibility as its advocates and practitioners increase globally and exponentially. The numbers refer to the recommended ratio of carbohydrates, proteins and fats in the diet. The resultant elevated blood sugar contributes to candida, diabetes and many other illnesses. This may take a period of several days or weeks, but once this has become habit some of the health-damaging foods may be easier to release. Nevertheless, once the addictive and highly processed foods are eliminated and the restorative powers of healing foods are realized it becomes easier and more desirable to stay the course.
In combination, these plant food components may have a very significant impact on cardiovascular disease, one of the major complications of diabetes. Oftentimes, B12 deficiency doesn’t show up until it is too late and there is already irreversible neurological damage. Instead, we are eating a vast biochemical symphony, built by nature, for nature, in order to function optimally.

It is one of the most pressing reasons why, with the thousands of diet fads out there, populations in general are gaining weight and infected by disease, as opposed to building a relationship with real food and connecting it to their lives. We are ostracized from real food when we are specifically seeking out certain nutrients and are dependent upon the nutrition facts label. Although the label may not distinguish between real foods and lab-made foods, our bodies cannot be fooled.
