Slow food isn’t slower or more difficult to cook than food using processed ingredients, but it does require some time and effort on the “stakeholder’s”  part composed of consumers and chefs to be more discerning.
They can take a stand and show their support by patronizing restaurants that buy organic produce directly from farmers. Her catering business is also largely influenced by demand from well-informed Filipino clients and foreigners for healthier and equally delicious alternatives.

On a personal note, said Fores, the desire to advocate slow food resulted from her “two health challenges” that came seven years apart.
This expo is by far one of my favorite events throughout the year to begin with, but she certainly made my day!
