I replaced the flour with toasted oatmeal (if you use gluten free oats this is a gluten free recipe), used bananas in lieu of oil, and honey instead of refined sugar. I just made these and they are great in their own right, even amongst the sugar filled muffins out there!
Unfortunately the amount of sugar and oil found in most muffins puts them firmly in the junk food category. This is calculated making 14 muffins using skim milk and unsweetened applesauce or bananas.
I put a bit of the batter aside and added a little bit of all-natural peanut butter, and now the muffins make an incredibly energizing snack for before my training, too!
I developed this healthy oatmeal muffins recipe from my Best Banana Bread recipe… but tried to make them even healthier! Toasting and grinding the oats results in a smooth muffin with a slightly nutty favor while the fruit and honey provide just enough sweetness to tempt your taste buds.
They are just sweet enough that I could call them “cupcakes” but without nearly as much sugar!


I used 1 cup of pumpkin in place of the bananas, pumpkin pie spice instead of cinnamon, and Fruit Sweet in place of the honey. The ingredients are so simple and healthy, it’s hard to believe that they make something so yummy.
I can’t believe how many years I have been eating unhealthy banana muffins when I could have been eating these!
