The other day I was thinking about the fact that the meat is pretty much a vehicle for the spices in sausage, so I got to brainstorming about how I could recreate a similar texture and flavor using whole food ingredients.
Pulse in the food processor just enough to break up the lentils, quinoa and veggies so they start to stick together—about 20 times max. You can also just brown the mixture as crumbles (right) and use to replace sausage in many recipes.
So I gathered together some of my best and easiest go-to breakfasts that provide a full and nourishing meal in less than 10 minutes. I seem to be bookmarking nearly every one – I love breakfast and there are some GOOD ones here!

It was one of those foods that I just had to let go of since the fake meat route isn’t an option.
I do eat oats myself, but certainly not every day (sometimes not even every week), but since lots of people do, my goal was to provide a selection for people who eat all kinds of things.
