I spent a lot of time talking to people about having healthy relationships with food and making empowering decisions that support their health. The reason I love these gluten free pancakes is because I am at a point in my life where I no longer need to restrict my food or punish myself for food. You may be wondering why I am talking about all of this while posting about gluten free pancakes. Overall Impression: This book is a great resource for people interested in trying out the Paleo lifestyle without having to sacrifice their favorite comfort foods! But when I opened this lovely book and saw all of the vibrant and indulgent-looking recipes there was nothing bummer-like about it.
When I've tried Paleo pancakes in the past, they have been those banana + almond milk + egg numbers that come out like very sad crГЄpes. I can say without hesitation that the pancakes in this book are not anywhere near the oh-so-popular Sad CrГЄpes of our time. Of all the things in this world to cook or bake, I seriously never thought pancakes would give me such a hard time. My son can’t do almonds either, so I have substituted cashew or sunflower seed flour in many recipes calling for almond flour and they turn out fine. What a coincidence… I just got a Paleo cookbook from the library and was thinking of trying out the pumpkin pancakes. I call a lot of meals my forgiveness meals to ensure I am eating them with the right mindset.
The answer is simple, we eat three times a day and it is perfect practice to continue to develop a positive mindset around food.

To the eggs add the almond milk, honey, lemon juice, and vanilla and whisk until well blended.
The diet claims to follow the blueprint of what our ancestors ate and excludes things thought to be difficult to digest such as grains, legumes, dairy, processed oils, and refined sugars. Juli and George do a really great job of coming up with food that anyone would want to eat, Paleo or not. It's written by popular bloggers Juli of PaleOMG and her friend George of Civilized Caveman (you may remember George as a winner in our 2013 Homies Awards!).
They are slightly mushy, and as a pancake lover, I am insulted to call them pancakes — I feel a pancake should be buttery, fluffy, and thicker than a gosh-dang crepe.

I know so many paleo advocates out there will say, “just treat it like another meal!” but here’s the thing…I don’t want to! I have been craving pancakes like crazy and with fall being here Pumpkin pancakes or anything pumpkin for that matter has been calling my name. Most of them miss the mark, which is why I set out to nail it and make it easy to have delicious pancakes at home every day you want them. These pancakes are delicious and can totally be enjoyed within a paleo or gluten free lifestyle.
My intention is that you make these delicious pancakes, slather them with some butter and maple syrup and smile.
Made them for my family this morning and you would have no idea that they weren’t regular pancakes.


You might be staring at me blankly right now thinking, "Well, then what the heck am I supposed to eat — sounds like a bummer." I hear you.
I was taught to make a three bean chili when I was growing up, so the idea of chili without beans seemed foreign to me. If you want an eggy souffle like pancake, you might be in luck because that’s what most taste like.
After several really bad batches of gf pancakes, I gave up trying, because they were realllly bad.
Having recently gotten rid of 50 pounds in the last 4 months I have pretty much decided that those fluffy buttermilk pancakes with a giant pat of melting butter and warm maple syrup are a thing of my past….until I saw your recipe! I recently tried another coconut flour pancake recipe and it was horrible, they just tasted like egg. But, as a person who has tried a lot of grain-free pancakes, I thought I would test out the recipe in this book to see how they stack up. I go to sleep the night before thinking about it, when I randomly wake up in the middle of the night, it’s the first thing that pops into my head and I just flat out refuse to let my restaurant quality waffle maker sit unused in a corner cabinet while I eat chicken and broccoli or some other “dinner” meal first thing in the morning. We want pancakes, waffles, crepes, oatmeal, overnight oats, buckwheat bakes… all the good stuff! I have a couple of questions thought…the paleo way of eating is something I have just recently started to read up on and I had heard that coconut oil smells terrible when you heat it up.
Paleo baking can be particularly tricky ( but extremely fun if you like experimenting) and this recipe is super easy and super delicious. The gravy used the addition of arrowroot powder as a thickener to give it that gravy-like consistency and subbed in coconut milk for the dairy. So I googled paleo pancakes a few months back and let me just say this, just because it’s on the internet, does NOT mean it’s good. Also, can you tell me what the nutrition information is on this recipe…mainly calories and fat per serving. Once holes begin to appear in the surface of a pancake, drop a small handful of chocolate chips onto it and flip it. I hope to make these soon and I really hope that my 15 and 11 year old will enjoy them as well. They include recipes for pulled pork nachos, cinnamon rolls, and countless other comfort foods done up Paleo-style.
