The rate of taxation will rely on the content of saturated fat perВ product and will be DKK 16 per kg of saturated fat within the given product with exception for meat.
This new tax is a further burden for exporters, as it will require processors to know the exact saturated fat content included in their product in order for the Danish importer to pay the tax.
A saturated fat is one which contains fatty acids where all the hydrogen bonds (H) are attached to the backbone of carbon (C) atoms in a symmetrical manner. This tax is a new addition to already existing long list of taxes applicable to foods and will be applied on all foods sold in Denmark which have a saturated fat content of more than 2.3%.

Indeed, Finland Finance minister Jyrki Katainen has reportedly indicated his interest in the Danish saturated fat tax and that he considers it to be the logical next step after the introduction of the tax on sugar. Even though the rest of the fatty acid is water insoluble, the region around the carboxyl group is soluble. This limited solubility allows cell enzymes, which function in an aqueous environment, to recognize and interact with fatty acids.

It is also likely that the types of fatty acid present in these natural trans fats are not as damaging as those found in industrially produced trans fats5. This involves heating the fat to a high temperature in the presence of hydrogen and a metal catalyst. Hydrogenation refers to how the fat has been treated.Fully hydrogenated fats are theoretically the same as saturated fats.
Any difference will relate to the efficiency of the manufacturing process, so it is quite possible that there will be some toxic metals and fatty acid fragments present.
You may find hydrogenated fats in chocolate where they have replaced the use of coconut oil.Partially hydrogenated fats are the ones which contain industrially produced trans fats.
Most of these oils will have been processed already to increase their shelf life and as such will already contain trans fats. In theory as extra virgin olive oil contains more healthy impurities, these could lower the smoke point of the olive oil7.
