Flavorful salmon is baked with spinach, mushrooms and tomatoes and dressed with vinaigrette. 3) In the same skillet, add another 1 Tbsp of oil and allow it to get nice and hot on medium high, season your salmon with salt and pepper on both sides and place them skin side down in the hot skillet. Place the pan in the oven and bake for about 3-4 minutes or until the salmon is cooked just medium.Return pan on the stove, sprinkle dish with lemon juice, add spinach and stir through all ingredients.


Cook the mushrooms for 4 to 5 minutes or until they have cooked down, add the tomato and season a bit more with salt and allow it to cook for a couple minutes.
