Millet is an ancient seed, originally hailing from Africa and northern China, and it remains a staple in the diets of about a third of the world's population. When preparing millet, I often toast it in a skillet before adding any liquid to enhance the nutty flavor of the grain. The second way is to use more water (3 cups instead of 2 cups) to result in a creamy, porridge with a polenta-like consistency — great for breakfasts. While I list the butter as optional here, it really helps keep the millet from sticking together, and a little bit of salt goes a long way.
Hi Christine,As what I know, some Chinese (esp the older generation) like to eat porridge as breakfast every morning. About porridge: on the automatic rice cooker with cooking file to boil, boil one hour was converted into low gear, if you hurry to eat until Aohao been cooking file boil into. Under porridge dishes: even bagged with pickled vegetables, pickled vegetables on the pot, add a small amount of soy sauce and chili oil, then slightly fried quite different smells. Rich in iron, B vitamins and calcium, millet has a mild corn flavor and is naturally gluten-free.

Measure millet and cooking liquid: You'll need 1 cup of raw millet and 2 cups of cooking liquid (water or broth).
Toast millet: In a large, dry saucepan, toast the raw millet over medium heat for 4-5 minutes or until it turns a rich golden brown and the grains become fragrant.
Remove From Heat and Let Stand: Like most grains, millet needs a little time off the heat to fully absorb the liquid. So while I often double or triple many grain recipes to have leftovers for the week, I don't do this with millet as I find leftovers to be quite dry. I also boiled Millet porridge when my son was young… tks for your recommendation, even I, liked it very much! It can be cooked in cooking pot, rice cooker, crock pot, slow cooker, claypot or pressured cooker.
Sometimes you'll see little black pebble-like bits in your millet, and these are simply the unhulled grain. You can also buy millet grits which are extremely quick-cooking, and are wonderful in any preparation you'd think to use polenta or grits.

So I decided to cook millet porridge which is not only suitable for his condition but also serves as a quick, easy and healthy lunch.
At the same time I can attend to other housework and not need to worry whether the porridge would burn.
To make porridge more nutritious and tasty, I added a variety of available ingredients into the porridge.
However, after I moved over to Singapore, I like to cook my porridge using a claypot or cooking pot because it is faster. Sometimes, when time is a constraint, I would boil millet porridge as it cooks faster than rice porridge.
