Simmer, partially covered, stirring occasionally, for 1 hour or until soup mix and vegetables are tender. I then returned the bones to a slow cooker with the poaching liquid and cooked for 24 hours to make a bone broth. I ended up getting my stick blender and blended the extra chicken bits for about 20 seconds.
When serving I also sprinkled MasterFood's lamb herbs (basically a mix of rosemary, garlic, marjoram, oregano, mint, thyme and basil) with a good pinch of pepper. After removing the lovely legs, I slightly blended the vegetable soup before re-adding the chopped up chicken. I use chicken marylands (thigh and drumstick), the meat is soft and succulent by the time the soup is ready. Just chucked a whole heap of veg, chicken, soup mix and stock in the slow cooker and left it all day.


I don't use the lovely legs but just chop a chicken breast or 2 into 2 or 3 bits (depending on size) and cook that then pull it before adding to the soup. I had too much chicken, so I got my stick blender out and whizzed the extra chicken for about 20 sec. Stir in spinach, the cooked chicken and any accumulated juices from the chicken; cook, stirring, until the chicken is heated through, about 2 minutes.
For last few minutes of cooking I then add a bunch of English spinach or equivalent in baby spinach leaves.
