I know most people feel like cutting carbs will be too restrictive but the key is having delicious low carb foods like this salad!! It’s a simple and tasty salad with all Paleo friendly ingredients and this dressing goes nicely with it. Publix had extra virgin olive oil BOGO and since i like Blue Cheese dressing the best, I got a 9 0z tub of Gorgonzola and another of Blue Cheese.
Remember to opt for the olive oil and NOT grapeseed oil as the latter is definitely not Paleo!
