You’ve just got to love these cookies because they follow the Paleo guidelines perfect, nixing any grains and added sugars, and using pure ingredients like raw cacao, almond flour, and coconut butter. If you want to add another layer of flavor to your pumpkin cookies, this is the way to do it. These cookies are really combining two cookies into one, and if you love the taste of chocolate chip cookies and wanted to merge them with pumpkin cookies you’ve come to the right place. These cookies are fun because you’re given license to add in your own mix-ins, so you can really make these however you want. Although grains are just one of the things you’ll want to avoid when making pumpkin cookies, this recipe does a good job of using ingredients that are all natural, and part of the Paleo food guide.
Before Thanksgiving, Alyson, a representative forВ the National Honey Board, contacted me on their behalfВ to ask if I wanted to share its gluten-free recipe for Pumpkin Honey Spice Cookies with my readers. October 16, 2014 by purelytwins 25 Comments How to make the easiest pumpkin cookies without any grains, gluten, dairy, eggs, or soy! Healthy 5 ingredient paleo friendly grain-free gluten-free egg-free soy-free and dairy-free pumpkin cookies made in 10 minutes.
Just like with our 4 ingredient peanut butter cookies, these cookiesВ have a ridiculously short list of ingredients andВ bake for only 10 minutes! If you desire using stevia to sweeten your cookies – omit the maple syrup and coconut flakes. Our purely fit sisters sure have been seeing us eat these cookies a lot in our daily eats posts. Just as we were thrilled to share our 2 ingredient pumpkin butter, we now have cookies to curb our pumpkin cravings!!
Glad you enjoyed the cookies, maybe add a little more maple syrup or make sure your coconut butter is more wet not dry. Love pumpkin and love to experiment with dessert recipes using it – so this one goes to my list of must try recipes :)!
Now you can get your autumn cravings met in a big way, because we’ve gone and made these pumpkin cookies gluten-free, honey-sweetened, and paelo-friendly.
The great part is that pumpkin itself is on the list of Paleo foods you can eat, so it’s only a matter of cutting out the flour, which is made from grains, and the sugar which is a definite no-no.
You’re left with all of the buttery and pumpkin taste that you’d expect from traditional pumpkin cookies, but your body doesn’t have to wrestle with the gluten and other ingredients found in them.

They’re referring to these as cake cookies, so they’re going to have a lighter, fluffier consistency than an ordinary cookie. But the base ingredients remain the same, and it’s a great go-to pumpkin cookie recipe that you can doctor up as you see fit. Take for example the honey used in place of sugar, or the coconut used to give it a hint of flavor.
I love helping people discover new paleo recipes and enjoy giving helpful tips on the Paleo diet. My passion is educating folks on gluten issues and showing how eating gluten free can be easy if you focus on "real" foods versus processed and specialty foods. I admit I have 3-4 cookies a day over here from my grain-free lactation cookies to our 4 ingredient PB cookies and now this one! Cinnamon and a touch of sea salt really round things out so you get a salty sweet and buttery cookie without the guilt. They’re using liquid stevia for the sweetness which helps avoid the need for sugar.
The pumpkin already provides some fiber, but it’s nice to get a boost since fiber plays a key role in the Paleo diet. In their example they’re using Paleo-approved chocolate chips and raw pumpkin seeds among others, and it shows you just how nutty and chocolatey you can make these.
In lieu of all-purpose flour generally used in baking they’re using both almond flour and arrowroot flour, so you are avoiding the use of grain products while still getting a cookie that bakes up just the way you’d expect. With 470+ easy-to-prepare Paleo recipes in 17 comprehensive categories it is the only Paleo book you will ever need.
I have been making a living writing about the Paleo Diet for the last year and have never been happier. Alyson simply contacted me because I was a gluten-free blogger to see if I’d be willing to spread the word on the National Honey Board’s gluten-free Pumpkin Honey Spice Cookie recipe.
These cookies stay soft, while not being too moist, and have the alwaysВ winning combination of pumpkin, pecans, and chocolate!
10 minute pumpkin cookies that are gluten-free, grain-free, egg-free, soy-free, and paleo friendly.
The chocolate chips that they’re suggesting are free of any dairy, any nuts, and any soy ingredients, so you don’t have to feel bad about eating them.
Pumpkin seeds are a nice touch, and fittingly used in a pumpkin cookie recipe, not to mention they’re totally healthy and one seed that should be consumed for its healthy fats.

They’re also making sure to use unsweetened coconut flakes, so you can see that the attention to detail is there and the sugar content has been kept to a minimum.
Please read about my journey here and see how I turned my passion for the Paleo lifestyle into a successful blog and career.
They say the raw honey is optional, but we’d suggest it because it will provide these cookies with a natural source of sweet.
When I did find pumpkin (in the form of several wonderful sugar pumpkins and some canned pumpkin), it first went to other beloved recipes, like pumpkin pies (both Crustless Gluten-Free Pumpkin Pie and Crustless Gluten-Free Dairy-Free Pumpkin Pie), Pumpkin Butter, a new recipe Pumpkin Butter Pecan Chocolate Chip Bars for a blog event to which I’d already committed, and to an all-time favorite of everyone’s, Easy Pumpkin Squares. I added some baking powder to help the cookies rise a bit more because almond flour is denser.
Plus, I kept dragging my feet because I really wanted to make these cookies grain free, too.
I first left the butter out completely because almond flour is moist and the recipe already had one cup of pumpkin, but then I decided to add a small amount of coconut oil for that nice mouth feel and slightly richer taste. Leaving out the oil is fine, too; doing so just gives less of a cookie vibe and more of a plainer pumpkin bread taste. Finally, it seemed like just the right time to turn on the oven for a while and make my version of these cookies!
Be sure to use a grain-free baking powder or grain-free baking powder substitution to make these cookies completely grain free.
I added chocolate chips because, in my opinion, there’s something about pumpkin cookies that has always required chocolate chips. I can eat pumpkin bread all day long without chocolate, but I like chocolate chips in my pumpkin cookies! I reduced the pumpkin pie spice because as much as I love it in pumpkin pie and even pumpkin bread, I like less in my cookies.
