First, I tried adapting my favorite Paleo Chocolate Chip Cookies, using oat flour instead of almond meal, but theВ resultВ didn’t hold together well. During the recipe development process earlier this month, I posted one of my trials on Instagram, mentioning how the cookies tastedВ good, but IВ still felt like they were missing something. The resulting cookies areВ lightly sweetened, with a crisp outside and soft, tender inside– just the way I likeВ them. Bake for 10-12 minutes at 350F, until the cookies are lightly golden and the edges are firm. Many thanks to Kelly and yourself for working in collaboration on this wonderful chocolate chip recipe. I tried this with two small eggs, and although the mixture was a bit “runny” (not too, too much though), it just made for larger cookies!
Since I’ve already covered buckwheat cookies and almond flour cookies, I figured a coconut flour recipe was in order for those of you who need to remain grain-free and nut-free.


Instead of being dense and chewy like a traditional chocolate chip cookie, this particular recipe yields a much lighter, almost cake-like cookie, similar to a chocolate chip muffin top. Use a heaping tablespoon to drop the cookie dough onto the lined baking sheet, and use your hands to flatten the cookies. I think that our favorite coconut flour recipes so far are the chocolate and blueberry muffins from Elana’s Pantry. This is my go-to recipe for chocolate cookies,sometimes I’ll add raisins, making them this morning for my orhto dr. Adding any extra moisture may help, but you might want to try storing the cookies in a plastic bag overnight– I found that they become MUCH more moist the next day!
I made these cookies this morning and due to my sensitivity to eggs, I used Paneriso egg substitute and they baked just fine and taste AMAZING! Just made these even more detoxiliscious by omitting the chic chips for cacao nibs and inca berries! Cool on the pan for 5 minutes, then transfer the cookies to a wire rack to cool completely.
My husband has proclaimed these cookies to be one of his favorites, anyway, so I hope those of you who enjoy softer cookies will love them, too! If you want to use a different type of flour, I’d recommend trying my chocolate chip cookie recipes using almond flour or buckwheat flour, instead. I tried it myself, and the resulting cookies were mushy and wouldn’t come off the pan.


My dad is the chocolate chip cookie lover so I make them for him all the time and he told me these were the best he’s ever had!! I happen to like making small cookies, but if your cookies end up being bigger, that is perfectly fine! It tastes awful before baking, so there’s no eating the dough, but it makes delicious chocolate chip cookies! If you are using Bob’s Red Mill Organic Coconut Flour, I would recommend sifting the flour first, I think it makes the texture of the cookie better. My husband, who was quite skeptical (and wondered why I was ruining good chocolate chip cookies, went back for seconds and thirds! Gently flatten the dough with your fingers, as these cookies won’t spread too much with baking. Thanks for your tenacity with healthful cooking; sweet tooth people like me need a little curbing every once in a while! Fold in the chocolate chips, then scoop the dough onto the lined baking sheet, leaving about 1½-inches of space between the cookies.
