Thank you for this recipe, I have tried other recipes for blueberry coconut flour muffins and they just didn’t pass as good muffins. These are delicious but they all stuck to the muffin paper cups… the oil seeped through the muffin paper onto the muffin tin for some reason… DELICIOUS!
Hi Tyler, I didn’t calculate the number of calories for this recipe, but you could plug in the ingredients into an online calculator. I completely forgot to add the oil, but still, they were the best paleo muffins i’ve made thus far! The blogosphere boasts a number of Paleo almond flour muffin recipes, most of which can be traced to one of two sources. In my mind a good muffins should have a tender crumb but must also be firm enough to stand on it’s own without crumblingВ  into your lap.


This recipe is gluten free, grain free, clean, lower in carbs, moist and the best almond flour muffins I’ve ever had. Place all ingredients excluding blueberries into your food processor and blend until smooth.

I used partially thawed mixed berries instead of just blueberries, and baking time for me was more like 25-30min before the tops were a light golden brown. I love working with almond flour; I used it quite a bit in my Gluten Free muffins cookbook. I wanted a good rise to the muffins, definitely, but 2 eggs per cup of almond flour was a bit much for me (they tasted overly egg-y). Almond flour is quite heavy and moist compared to traditional flours; the eggs do a lot to lighten the muffins and help them rise.
I used blueberry honey as the sweetener and replaced the cider vinegar with apple cider vinegar with manuka honey – very delicious.


No one even questioned what they were made of, thinking they were just homemade blueberry muffins.
My husband and I are paleo, but my 2 year old is still eating grains, and I wanted to make her something that was more nutritious than the standard muffins her daycare has been giving her. I’ve tried other almond flour muffin recipes but this one beats them all (not too much egg flavor and a little more airy). After telling them that they were organic coconut flour blueberry muffins, everyone was asking for the recipe!
