One special treat while eating on the Paleo diet can be a batch of Paleo muffins or cookies for the week. I actually believe that the muffins turn out better than baking an entire loaf of banana bread.
There is a little trick that I incorporated here: preheat the oven to 25 degrees warmer than the recipe calls for, then lower it to the baking temperature when you put the muffins into the oven. They’re fast and easy to make (no mixer required!), and the banana keeps the muffins so moist and light! The whole family will love these irresistible muffins, and the recipe is so easy to half or double, depending on how many hungry eaters you’ve got at home! There are a lot of people in my life that have gluten-allergies or are choosing to live a paleo lifestyle.
Just made these and followed exactly what the the recipe says but used cashews as my nuts..
Blueberry muffins have to be the most popular flavor, and you can have them on the Paleo diet as long as they are made to Paleo standards. These muffins are trying to tell you something by their title: they’re just about as delicious as it gets. Cardamom might not seem like an obvious choice in terms of things to add to blueberry muffins to make them taste better, but once you bite into these muffins you’ll soon see why they were used.
