The classic Arrabiata Sauce is found served in Lazio, Abruzzo, Moliese and elsewhere in the south.


The preferred pasta for this sauce is Penne Rigate, the Penne Pasta with lines that are designed to catch more of the sauce. Boil your Penne Rigate  in plenty of salted boiling water, cook until al dente, for 9 to 12 minutes this depends on the brand and the type of pasta, see pasta types. Raise the temperature and add the sauce to the pasta, enough to liberally coat the pasta but not drown it.
This scrumptious tomato and garlic sauce goes perfectly with the always delicious penne pasta.
