For a healthier breakfast muffin, consider swapping the sugars with coconut sugar or evaporated cane juice and using whole wheat pastry flour rather than all-purpose.
That said, I prefer the texture of muffins without gums, even though they an be a little more crumbly.
Xanthan gum is an important ingredient in gluten-free baking as it helps provide structure. When Whole Foods took them over, they attempted to keep the power muffin legacy, but their version just didn’t measure up.
If you don’t have any hemp hearts on hand, the muffins will still be good, but not quite as powerful. I’ve included a few notes on how to adapt these muffins, if desired, but we love them as is.
If you can and do eat eggs, I would first start by using eggs rather than egg substitute if making them gluten-free. I'm new to all this gluten-free cooking and therefore unaware of some of the terminology!

The healthy gluten-free muffin recipe below is by no means identical to those original power muffins (which were made with spelt flour and quite a bit of oil!), but they truly reminded me of them and gave that same comfort food feeling.

Gums will help keep the muffin cohesive, but again, I can’t say what would work best without testing. I was actually a bit surprised at how the buckwheat almost mimicked the earthy flavor of spelt, but sans gluten.
Rotate pan and continue to bake about 10 minutes longer or until muffins are golden brown and toothpick inserted in center comes out clean. Divide the batter between the prepared muffin cups and sprinkle each muffin with the sugar-cinnamon mixture.
If you like muffins a touch sweeter then you can increase the honey or maple syrup to ⅓ cup.
