Several months ago when I started paying more attention to personal finance blogs one of the first things I noticed is weekly meal plans or menu plans.
I did an inventory of what we had on hand and used that to come up with ideas for meals throughout the week. As soon as I posted our meal plan on the fridge for the first week I felt this huge weight lift off of my shoulders.
As long as I remembered to look at the plan each morning and take whatever I needed out of the freezer for dinner, I was doing well.
If I run out of ideas for meals, I browse the weekly grocery store flyers to see what is on sale that week. It may seem like we make the same meals each week and many times we do because we enjoy making simple quick meals that include veggies and protein. My wife and I have been doing it for a couple of years and it's saved us a tremendous amount of money! I spent a good chunk of my weekend planning meals, grocery shopping, and testing out recipes.
My additional motivation for not screwing myself over this week is the amount that I indulged this weekend.
Knowing how crappy the sugar overload made me feel this weekend inspired me to make a yummy Thanksgiving dessert that used all-natural sweeteners instead of the refined stuff. These protein-packed cupcakes are gluten-free, right around 100 calories per cupcake including the whipped topping, and they’re sweetened with granulated Stevia and all-natural honey. The site also offers Weekly Meal Plans, including an All Slow Cooker version with grocery lists and printable recipes. I also tried to include breakfast and lunch, although most days we usually eat the same thing for breakfast. My grandpa is in town, the groceries have been purchased, and I have a finalized menu for the big day.
This is the beauty of planning things in advance: with a little forethought, you can give yourself time to try new recipes and tweak (or nix) as needed. For liquid sweetener, I use both Better’n Stevia (their Dark Chocolate is amazing in Greek yogurt with some fruit) or Stevita (love Toffee).
For those very reasons I believe in the power of meal planning and how important it is for parents like you and me. She speaks in the Dallas area to mom and parenting groups and loves helping busy families get dinner on the table. She has three boys ages 8, 10 and 12 who can’t remember to pick up their dirty clothes or take out the trash. Before we had so much in the fridge that some things would expire before we even got to it.
Her chief blogging inspiration is being the proud & slightly neurotic mom of a preschool age daughter. I’m terrible at making decisions and tend to have a lot of random cravings, so having small portions of whatever sounded good from oysters to churros all at the same restaurant was AMAZING.
What was less than amazing was the blood sugar spike and corresponding crash that followed the food.
