I watched the movie with Raw Food for Everyone open on the table in front of me and I figured out how I could teach myself amazing raw food cooking tricks and save thousands of dollars by teaching myself. It took me 11 months to cook my way through all 300 of Alissa’s recipes in Raw Food For Everyone. I’d spend every Sunday morning with a pad of paper in one hand and Raw Food For Everyone in the other. There is no other book that I would recommend more for delicious recipes than Alissa Cohen’s Raw Food For Everyone (other than her first book, Living on Live Food!).
Last month, BigKitchen provided me with a Waring Pro food dehydrator and it’s been so much fun preserving fresh summer produce.


I think I have the basic daily cooking conveniences covered, but amongst the things that I think would take me to the next level are a pressure cooker (useful especially here in the Rockies), a sous vide machine and of COURSE a food dehydrator. Once the nonstick sheets are removed, return to the dehydrator for 30 – 60 mins, until both sides are dry to the touch but still pliable. Marinate all ingredients for a couple of hours, then place on a dehydrator sheet and dehydrate at 105 degrees F for 1 – 2 hours, until soft. You could just skip the marinating & dehydrating part of this recipe to save time, and eat the veg crispy. Yes, chickpeas can be a little difficult for some people to eat raw, in terms of digestion. You marinate the veggies in the ingredients that are in the recipe – just the oil, lemon and salt.
It is SO easy and fast to make, and topped with avocado, lettuce and tomato makes the most delicious snack.

I understand the principles behind what makes her food so great, fresh ingredients, amazing spices, some creativity and lots of love. Dehydrating food always makes me think of my father and homemade beef jerky and fruit leathers!


I still don’t own a dehydrator though – I think I will have to invest in one as I do feel I am missing out!
And without using any complicated gadgets or making something now to eat next week (dehydrators are SO slow), I thought making any kind of raw bread was pretty much impossible.

I used a combination of dried cherries, pineapple and apple in this honey nut granola recipe and it was superb. Some recipes may seem daunting at first, but with just a little planning it’s simple to have a gourmet raw food meal every night.
I needed to expand my horizons, try some new foods, and really get to know a cookbook for once.
If I stuck to 20 new recipes a month I’d fall way short of the 300 I was hoping to make in a year.
