Eileen thoughtfully provides two versions of the curry sauce that can go into this preparation, a seeded version and an alternative for those on a strict AIP (Autoimmune Paleo) diet.
Another recipe that requires a crock-pot, this one keeps it simple in terms of amount of ingredients but a few things stand out as obstacles to me. I think this mango chicken curry is really a fusion of my two favorite cuisines, a Thai-Indian blend that is the best of both worlds!
Heather adapted this great curried chicken salad recipe from one of our favorite blogs, Nom Nom Paleo, and she personalized it by adding a little cinnamon as well. The Saffron Girl adapted this chicken curry from a famous Spanish chef who makes his own curry mixture. This easy curry from Michelle of Nom Nom Paleo lets you choose your curry paste flavor and includes squash and frozen veggies.
A simple crock-pot curry, this one is mostly chicken but uses diced tomatoes and collard greens as well, which dissolve pretty quickly and blend in with the sauce.


I like the ease of this recipe, and the fact that the proportions are perfect for one, which is rare to see in recipes online. Not only does the food pop off the pages, but the attention to detail paid to modify recipes (even AIP pizza!) makes Mediterranean Paleo Cooking a cookbook that will be useful and useable to so many people. Nabil went Paleo shortly after to support his wife in her healing and he noticed improved energy and concentration, as well as a 15 pound weight-loss in several weeks. The book also has 30 day meal plans, one for AIP and one for regular Paleo with downloadable shopping lists and nutritional info. The book has all the well-known favorites from the region such as pita, falafel, Moussaka, kebabs, baba ghanoush, hummus, as well as many tajine recipes that incorporate the goodness of broth [note from Stacy: FIST PUMP!]. Caitlin and Nabil even went to the Mediterranean region twice to do tasty research while gathering recipes. I’ve got you covered with this lovely cauliflower and kale dish, seasoned with lots of garlic, ginger, turmeric, and creamy coconut milk (my recipe here). I was skeptical when I started cooking this, as another curry recipe earlier in the week was a big disappointment. This is a simple version of a classic Thai curry (curry paste, coconut milk, chicken and veggies) that can be added upon if you want to make it more elaborate.
This simple recipe is similar to the Thai curries above but instead of curry paste, it just requires curry powder. You just chop up some chicken and veggies and chuck in the additional curry spice, condiments, and coconut milk plus broth.


This recipe includes rogan josh curry paste but if you already have a different curry paste or powder at home or want to make one, Erica gives additional instructions. Blogger Andrea also includes a great cauliflower rice recipe to include as an accompaniment. She is a certified Nutritional Therapy Practitioner by the Nutritional Therapy Association, and is the author of The Autoimmune Paleo Cookbook, a guide and recipe book for the autoimmune protocol, and AIP Batch Cook, a video-based batch cooking program. So for those of you who are scoping out Paleo in general feeling a sense of relief for the nomtastic recipes folks have developed, let me tell you that I totally relate.
I mean I have found a lot of AIP recipes but none have really sounded that great or I just haven’t been in the mood for them, but this recipe definitely sounds good!!
I love the way she uses an immersion blender at the end to blend everything but the chicken so that it ends up in a saucy mix instead of chunky bits.
She is currently either cooking, eating, grocery shopping, or browsing recipes on Pinterest. It is wonderful for people who may have been Paleo for a while and are bored with the same old thing because it incorporates new flavors to wake up your palate such as cinnamon, cumin, ginger, turmeric, garlic and fresh herbs like mint and cilantro. Scoop equal amounts of the artichoke mixture and spread into the pocket on the butterflied chicken breast. Carefully fold the chicken breast back together and secure the open side with the soaked bamboo skewers. Preheat the grill to medium-high or about 400В°F, then place the chicken down in a single layer.
