My Mediterranean Almond Bread caused quite a stir when I posted it, getting me some very kind comments on various discussion boards. When I mentioned, what seems like ages ago, that I was developing a nut-free version of my bread, I had quite a few emails asking me for the recipe. Process the olive oil, sun-dried tomatoes, sprouted buckwheat, courgette, apple, lemon juice, avocados, onion and parsley until thoroughly mixed.
When mixed, process the whole batter in the machine again, but in small batches to achieve a light fluffy texture. Use a spatula to spread the mixture evenly to all 4 sides and corners of the Paraflexx sheet. Flax is used in the recipe to hold everything together, so sesame won’t really do that.
Hi Russell, I’m taking the plunge and getting a 4 tray Excalibur dehydrator and would love to try this recipe.
Yes, you can certainly make in a 4 tray dehydrator and in a smaller food processor, in the way you described.
I admit, I hadn’t considered sticking to the original quantities for processing and doing it in batches then combining by hand.
So maybe, just maybe, if you think it is doable, then I’ll process this recipe in batches and combine by hand at the end , and make 3 trays of your lovely sounding bread next time. Thanks for the advice and for giving us this platform to discuss, it is immensely helpful to have your advice.
Any general tips you have for making smaller quantities or for doing things in batches then combining by hand would be very helpful. Hey Louise, when I’m making things in batches, I tend to get the full recipe together in a large bowl, stir it up by hand, then blend or grind in batches.

If you could host a dinner party for 3 guests (dead or alive)- who would they be and what would you serve? Ah, I’ve been a veggie all my adult life, a vegan for 26 years, and raw for 14 years.
This is a beautiful and delicious all purpose loaf of what I call “better than bread” and for those who prefer breads to sweets… this will be heaven! Makes one beautiful loaf that serves about ten people, but feel free to experiment with various shapes and sizes. Set aside a teaspoon of salt, a teaspoon of dried herbs and a couple of teaspoons of maca for sprinkling on the top. I like to have green juice, some probiotic food or drink, some raw chocolate or smoothie with superfoods and lots of big green salads in my day, alongside a small amount of sweet fruit. I’ve got a free pass from my BF to have a bit of Russell, should the opportunity ever arise!
That tactile feeling of holding something when eating (get your head out of the gutter!) is very important to me, as it is to a lot of people.
They’re so great — once you have the bread made, it’s so quick and easy to build a sarnie! When you add the flax meal, the mixture will become quite heavy and sticky and could overwork your machine. Could you please tell me what can I substitute tomatoes with as I really don’t like the flavor of dried tomatoes? We had dried our own tomatoes last summer so i used those, but they were very dark and the bread looks more like pumpernickel LOL And had to substitute fresh spinach for zucchini, but overall… I’m ecstatic!
So I typically end up scaling some recipes down to a far smaller fraction of the ingredients than originally intended and not only is it a headache to calculate and measure out the quantities , but it doesn’t always work. It requires one piece of very special kitchen equipment that raw foodies love: the smoking gun!
I guess beyond that, I want to remain an inspiration to others, so we have more inspired and inspiring people in the world.
I often go out for the morning, end up out all day and can’t find a thing to eat where I am.
You can also easily add dried green powders and superfoods to water for instant nourishment, and it weighs barely anything.
How about an infra red sauna, a lymph drainage massage, a tip-toe in the sea, an algae wrap or an enema?! I am releasing enough “stuff” from my ancestral line without putting more in by eating animals! I also find that my dehydrating times are very significantly less than recommended in recipes. By applying a touch of wood smoke to uncooked foods you regain some of that winter warmth you may miss from cooked and oven-roasted foods. I met her for the first time when I was new to the UK and reasonably new to raw food, I though I’d be completely star struck and intimidated when I saw her at a festival, but all she had to say was ‘Oh I’ve just had one of those coconuts myself, I just love me some coconuts’ and with those few words and her energy, it was as though she sprinkled fairy dust all over the room and made everything peaceful and vibrant. Because I didn’t have sun dried tomatoes for the bread I substituted fresh tomatoes so the dehydrating was much longer and the bread was a little bit darker. So I deal with it by not telling myself off (it’s how I am), by eating what I can when I can, and by always eating super super healthy at home because somehow my fridges are usually quite abundant. I want to keep this juicy, alive, inspired and visionary way of living, so my food choices have to reflect that. If I can influence one person to make a positive change towards health then I’ve done something good.
