You really have no excuses to miss breakfast with this delicious little thing staring at you. November 1st is a bank holiday in France, so I made the most of the day off by catching up on rest and school assignments before heading to Sherin’s for dinner and a night out to see the Beauty and the Beast musical at Theatre Mogador. Here are some suggestions of what you can stuff or top your eggs with: smoked salmon, goat cheese, asparagus, green chile, avocado or guacamole, black beans, low-fat cheese, tomatoes, onion, etc. I recently tried this recipe for yogurt biscuits, though, and was pretty pleased with how they turned out. I mean, they’re not as good as biscuits cooked with lard, obviously…but they’re not a bad substitute. I made a dozen of these, so that lasted my Husband and I only 6 days, which was perfect for our work week.
