Here are some suggestions of what you can stuff or top your eggs with: smoked salmon, goat cheese, asparagus, green chile, avocado or guacamole, black beans, low-fat cheese, tomatoes, onion, etc. I recently tried this recipe for yogurt biscuits, though, and was pretty pleased with how they turned out. I mean, they’re not as good as biscuits cooked with lard, obviously…but they’re not a bad substitute.
