So on Friday, I visited Centre Point to pick up a few ingredients for my kimchi making session on Saturday. First, I wasted some time visiting a few shops in China town, such as See Woo, thinking they might carry a few Korean food items. If I am to start my monthly kimchi making practice, I guess I will have to make a trip down to New Malden, Surrey to purchase bulk supplies.

After fifteen minutes, waves of dishes started making their way to our table, and soon our entire table was flooded with a variety of small dishes. On this alien planet one dish in particular managed to find its way onto almost every table I sat at -- Kimchi!
This 2600 to 3000 years old dish generally has a varying degree of spice to it, and the number of different types is staggering. Traditionally, the order at which one sits at a dining table is arranged according to rank, with the youngest being seated closest to the door, and the eldest at the head of the table. I scanned the table and I couldn't identify a single dish, a terrifying thought for a fussy eater like myself. There is nabak kimchi (radish water kimchi), oi sobagi (stuffed cucumber kimchi), yeolmu kimchi (young summer radish Kimchi), gat kimchi (leaf mustard kimchi), pa kimchi (green onion kimchi), vangbaechu kimchi (western cabbage kimchi), gul kkakdugi (diced radish kimchi mixed with oysters), and many more.


When consuming alcohol it is courteous to pour the glass of the eldest first with two hands and, when receiving or being poured drinks, do so with either two hands on the glass or with one hand on your chest. As a foreigner you will largely be forgiven for any lapse in this regard but taking note of some of these will put you in good standing. I was looking for at least a 500g or 1kg bag of the Korean chili powder, but they only had the 227g size and I wasn’t sure it would be enough to make more than one napa cabbage load of kimchi.
After I sampled some of the table's offerings, my boss turned to me and asked "So what do you think of the dog soup?" Shocked and confused I turned to face him only to be met with smiles and chuckles. So, I’d pick up the packet to make sure there was no shrimp or anchovy listed among the ingredients. Within this sprawling concrete jungle she managed to find restaurants with vast outdoor seating and lush landscaped areas hidden away from street view. Another interesting cultural point of etiquette is when actually drinking alcohol with an older person, it is customary to turn away before you drink, as not to be seen drinking it. And when somebody older than you offers you a drink, you should try to oblige him or her, as rejecting this gesture could be considered offensive.
All of a sudden, I noticed that none of the kimchi kept in the refrigerated section was vegetarian. The reason for this I have yet to find out, but it meant that my convenience packet kimchi days were over. It’s not like kimchi is difficult to make or the ingredients are hard to source, at least not in London.
Roasted garlic, spaghetti alla puttanesca, garlic mashed potatoes, but these are all forms of cooked garlic.
I was afraid the smell of garlic was going to take over my fridge, spread through out the kitchen and then engulf the entire house. Surprisingly, none of my colleagues said anything, but it didn’t stop the perceived vapour of shame from emanating from my pores.
