Heat the oil in a large pan, add the onion, carrot and celery, and sweat for 10 mins until soft. Put the leeks, butter and herbs in a pan, cover and cook over a low heat for about 20 mins until very soft, stirring occasionally. Parmesan is a straw-coloured hard cheese with a natural yellow rind and rich, fruity flavour. While the leeks are cooking, put the potatoes in a pan of cold water, bring to the boil and simmer for 4-5 mins until just cooked. Transfer this to a baking sheet and roll the remaining pastry and any trimmings to a round about 5cm bigger than the first. Add the onions and thyme, cover, and cook over a gentle heat for 10-15 mins until softened and caramelised.

Put in the oven and cook for 30 mins until the cheese is melted, the top crisp and golden brown, and the gratin piping hot. Meanwhile, heat the oil in a large pan, add most of the spring onions and fry for 2 mins until softened.
